James E. Carroll was born on November 17, 1937 in Pitt County, North Carolina. He was the eldest son the late, James and Mattie H. Carroll. James parents raised him in the small community of Stokes, North Carolina. James attended Stokes Elementary School, then graduating from Bethel Union School. During the summer months James worked several part time jobs in the surrounding communities. While working, he developed great work ethic, which molded his path towards his success in life. At the age of twenty, James moved to Baltimore, MD to embark on greater opportunities. James worked for fourteen years as a Food Service Specialist with Seaton Institution, located at Catholic Hospital. This job inspired him to pursue a career in Culinary Arts, which he received a two year degree. James started working for Eastpoint Horn and Horn Cafeteria in 1971. With James’s knowledge of food he was promoted to the head chef and supervisor, with the responsibility of food service operations at the Bel Air, Golden Ring, Towson, Severna Park, Rotunda, and the Eastern Center Smorgasbords. James aka, JC was widely known for his specialty dishes, commonly known as “Something Supreme”. In 2000, after working for twenty-nine years as a Culinary Specialist, James retired and moved back to Bethel, NC. After the death of his mom, James’s love for the Art of food led him out of retirement into accepting a position as chef for Walter B. Jones Alcohol and Drug Treatment Center. He worked diligently until his health started to fail him. James learned early in life that in order to improve the quality of life for his family and himself, he must work hard and demonstrate faith in God and invest into his career. This philosophy led to his great success as a brother, father, uncle, grand-great-(great-great)-grandfather. God gave him the gift of knowledge and wisdom to use to help his family in so many ways. God truly blessed him and he shared the love of God continually with his loved ones and friends until his death. James was preceded in death by his father and mother, James and Mattie H. Carroll, three brothers, Larry Carroll, George Carroll, and Sylvester Lynch; three sisters, Vernice Carroll Washington, Helen Carroll Webb, Cora Carroll Grimes; two great grandsons, Jahlil and Tyrell. James leaves to cherish his memories, his children; four daughters, Mattie Parker Wilikns (Gary) Prince George,VA, Rosa Parker Brown (Joe), Greenville, NC, Bernice Carroll Brown (Eric), New Haven, CT, Cynthia Carroll Ifill (Glen), Waterbury, CT; four sons, James E. Carroll, Jr, and Ronnie Green, Greenville, NC, Anthony Randell, Alexandria, VA, and Jarvis Carroll, New Haven, CT; three sisters, Eunice Carroll Purvis, Greenville, NC, Rev. Mildred C. Brown (Isaac), Rocky Mount, NC, Gloristine C. Mayo (Rev. C.D.), Ayden, NC; one brother, Calvin E. Carroll, Greenville, NC; one brother-in-law, George Washington, Washington, DC; one uncle, Ernest Holland, Jr.; ten grandchildren; nine great grandchildren; many nieces, great nieces, nephews, cousins, other relatives and friends. Little we knew that day; God was going to call your name. In life we loved you dearly; in death we do the same. It broke our hearts to lose you. You did not go alone. For part of us went with you, the day God called you home.
